This high quality knife steel is punched to make the blades, which are then hardened with a cryogenic hardening treatment. This treatment makes FRIODUR blades very flexible and gives them extreme strength in terms of cutting surface. At the same time, thanks to ice hardening, they are protected against rust. The ZWILLING Gourmet universal knife has a plastic handle attached to the blade with three rivets. It has an ergonomic shape and like the blade it is very light. Thanks to this feature, the knife is very easy to handle and ideal for prolonged work.
