This also applies to the Shotoh knife, whose 140 mm blade is sharpened on both sides. It is usually used for cutting fruits and vegetables, peeling and cleaning. The blade is made of FC61 steel. This is characterized by extraordinary hardness, and is able to withstand the strongest stresses. Another advantage of FC61 steel: with this special steel you can achieve an incredibly fine katana edge cut, resulting in high sharpness and edge holding capacity. Originally, this cut was typical of Japanese sword blades and today it is considered an expression of the craftsmanship of master cutlers. With its octagonal-shaped handle and reinforcement, the MIYABI 4000FC knife fits securely and comfortably in the hand. In addition, the impregnated and dimensionally stable pakka wood handle is decorated with a mosaic pin as a stylish detail. ZWILLING produces all MIYABI knives at its own manufacturing facility in Seki, Japan.
