A rigid and easy-to-handle knife. Ideal for filleting meat and removing excess fat. Its precise cutting action limits waste, even with small pieces.

• Blade made of high-quality 1.4116-X50 Cr Mo V15 chrome-molybdenum-vanadium steel. Laser-cut blade from 3mm sheet. Grinding, tempering, satin finishing, and sharpening are all done using artisanal techniques.
• "Technical" handle molded in thermoplastic polymer with a direct grip to ensure maximum ergonomics of use and suggest the correct grip. Double texture in the grip areas to increase grip.
• Front ring for perfect blade locking.
• Rear ring that guarantees perfect balance thanks to the insertion of steel balls.
